Honors College Thesis
My undergraduate thesis project for the Sally McDonnell Barksdale Honors College was the creation of a cookbook for undergraduate students. Many students find themselves away from home for the first time in college -- and without the skills to feel comfortable preparing foods in the kitchen. However, home-cooked meals have been shown through research to be healthier than meals eaten away from the home. This cookbook is on file at the Department of Nutrition at the university now, and can be used as a resource to give to students at events or in orientation packets.
Director of Health Promotion, Associated Student Body
I was appointed to this position on the Cabinet by the President of Associated Student Body. It was the first time such a position has ever been held. This position put me in charge of promoting wellness initiatives on campus. Throughout my time in this position, I worked with the contracting food service agencies to get healthier options in the vending machines, hosted a series of "health" talks on campus, worked with the smoke-free campus initiatives in Student Health, and also designed and ordered a supply of promotional pedometers to have as giveaways for student events.
